I vow I will never again crush a tomato by hand!

I’ve seen it done countless times on those cooking shows–sometimes they squeeze the tomatoes directly into the pan, sometimes into a large glass bowl before adding them to the pot. I’d never done either, usually opting to dice on a cutting board–or even for some recipes, a quick blitz in the mini-processor. (Blasphemy, I know! Sorry Mario, Giada, Ina, Lidia…) I really enjoy the elemental nature of food and cooking–and I’m all for hands-on—there’s nothing I like more than kneading dough and rubbing spices into meat. I even dream of finding the vineyard in Italy that will allow me to re-enact the Lucy-in-the-wine-barrel experience! *smile* But hand crushing tomatoes? That holds no appeal for me.

French Crumb Cake

Mmmmm…this is one of those things that when I get a craving for it, nothing else can take its place. I think the reason for this is that it is *Just Plain Good*. And I mean that as high praise. Just as when you call something ‘vanilla’, that doesn’t necessarily mean its boring.

Don’t get me wrong I enjoy coffee-cake-type-cakes that have sour cream or nuts or fruit or oats in them…but there are just times when it is the clear simple flavor I crave. And when that craving strikes, this is the recipe I turn to.

Oh my! This should be renamed “Heaven in a Bowl”! It is so perfectly simple–leeks, potatoes, water and salt—but it becomes something so luscious once cooked and crushed all together… you wonder what kind of magic must have taken place in the pot.

It’s hard to believe that such a few common ingredients can be turned into something so thoroughly interesting and complex. And soothing and comforting—but so far from common! It does make my list of “Ultimate Comfort Foods”—but one that just as often makes me want to pour myself a great glass of red and pull out the linen napkins to go with it. Sometimes comfort can be dressed up at the table, no?

Are these Vintage Wine Striped Tomatoes I found at the Union Square Greenmarket. I mean, look at that big, rippled beauty on the left! Even if I didn’t eat tomatoes (which of course I do, in abundance!) I would’ve bought it on aesthetics alone…
