What a muffin! Soft, moist, unbelievable-smelling, and addictively delicious! I’d seen this recipe over at Anne’s Food and had it tucked away, waiting for a lazy Sunday morning to give them a try. And I’m so, so happy that lazy morning rolled around today!

Chicken with Eggplant

This is something I saw Lidia Bastianich do on one of her shows, and is it fabulous! Sometimes her sense of flavoring is a bit bland for me (I am a Flavor Junkie after all!) but this one is just spot-on!

Since I just watched the show and tried re-creating it without an actual recipe, please use the amounts below as guidelines, rather than directives.

Dinner tonight was something quick, healthy and delicious. I love diet-friendly dishes that are so packed with flavor you would never know they’re diet unless someone told you. That’s my version of healthy living, let me tell you—no denial! *Smile*

I based it on this recipe from Gourmet, adjusting it to make it diet friendly (almost no fat!), work with what I had in house, and–as always—increasing the sauce. I’m not including a photo….and you should be thanking me for this, trust me. The vegetables were delicious…but as I used only greens and whites, and as they were cooked for a good bit of time in the liquid…..they were the limp equivalent of a 1970-s kitchen. *smile* You know, avocado.

I love soup. And though there are thousands of variations, it’s not too often that a simple soup of water/broth, vegetables and a little bit of pasta seems so incredibly out of the ordinary…but this one really, really does it. And in under half an hour no less! It must be the caraway seeds–I can’t remember ever using them in a soup before, and it is so refreshing and new…

I saw this recipe from Martha Stewart and had tucked it away–knowing one day soon it was going to come in handy. I was looking for a starch to go with ham and lamb, had a bunch of leeks in the fridge so as soon as I saw this recipe again, I knew it was the time to make it.
